Jam Tarts with Alison Aimes

 

 

 

 

 

Who tried it: Alison Aimes, author of Besting the Billionaire

 

Why she likes it: 

There is little I enjoy more than settling in with a great book, a mug of coffee, and a jam tart. Luckily, jam tarts are easy to whip up, if you use a few shortcuts. For the crust, any pie crust recipe will do (my favorite is America’s Test Kitchen), but to cut down on kitchen time, store-bought crust works great. Store-bought crust tends to be thick, so roll it out a bit so it’s thinner.

You can use a tart pan, but I use a mini-muffin pan or just a regular muffin pan, depending on how big I want to make the tarts. Cut the pie dough into circles that are a little bigger than the hole they need to fit in. (Four inches is about right for a regular muffin pan.)

For the filling, you can use any type of jam. I love using lemon curd—again, either store-bought or homemade works.

Grease the pan and press the dough circles gently into the molds. Fill with a tablespoon or so of jam, but do not fill to the top. If you have any leftover dough, cut out little shapes and place on top of the jam. Bake at 350 degrees for 15-20 minutes. Let cool completely before eating! I’ve burned my tongue being too impatient.
