Not Quite Five Alarm Chili from Dawn Altieri

 

 

Who tried it: Dawn Altieri, author of Burn

 

Why she likes it: In my novel Burn, firefighter Ryan Monroe and the rest of the crew at the Ridgeport Fire Department love their Five Alarm Chili! But let’s face it, summer is no time for slaving over a giant bubbling cauldron, no matter how delicious the end result tastes piled onto your BBQ’d hot dogs. Here’s a quick and easy recipe for your slow cooker that will leave you with plenty of free time to devour a good book by the pool before you devour dinner.

 

 

Ingredients:

2 lbs. lean (at least 80%) ground beef

1 large onion, chopped (1 cup)

2 cloves garlic, finely chopped

1 can (28 oz.) diced tomatoes, undrained

1 can (16 oz.) kidney beans, undrained

1 can (15 oz.) tomato sauce

2 tablespoons chili powder

1 1/2 teaspoons ground cumin

1/2 teaspoon salt

1/2 teaspoon pepper

 

Directions:

Cook the beef and onions in a skillet over medium heat, stirring occasionally, for 8 to 10 minutes until the beef browns; drain.

Combine the beef, onion and remaining ingredients in a  4- to 5-quart slow cooker. Cover and cook on low heat setting for 6 to 8 hours.

 

***I like my chili with slightly less than “five alarms,” but you can add as much red pepper and jalapeño as you’d like to get your own fire going.

Scoop it over tortilla chips along with shredded cheese, chopped scallions, sliced jalapeños, diced tomatoes, shredded lettuce and some sour cream for crowd-pleasing nachos.

Or load it up on your hot dogs at your next cookout!
