Hi! I’m Talia Hunter, author of Her Hot Number, and after working hard all year, I firmly believe in giving myself a leave pass to relax during the holidays. The last thing I’m keen to do is spend a lot of time cooking – but that’s not to say I don’t enjoy eating a treat or two! If, like me, you want maximum taste for minimum effort, you’ll love this Date and Almond Slice.

This is my go-to recipe for when friends or family drop around, or when I feel like spoiling myself. Not only is it super-quick to mix together, it takes only 20 minutes in the oven, it tastes amazing, AND I like to pretend it’s healthy enough that there’s no need to feel guilty about scoffing the whole lot. (Dates and almonds – it’s got to be good for you, right?)

Do yourself a favor these holidays and give it a try. I’m sure it’ll become a favorite at your house too.

– 1/2 cup of softened butter
– 1/2 cup of raw sugar
– 2 eggs, lightly beaten
– 1 1/2 cups of rolled oats
– 1/2 cup of plain flour
– 1 cup chopped dates (pitted)
– 1/2 cup slivered almonds

Mix the butter and sugar together, then stir in the eggs.
Stir in the rest of the ingredients and mix well.
Press the mixture into a slice pan (I like to line mine with parchment first so it’s easy to turn out). Smooth the top down with a spoon.
Bake for 20 minutes at 180ºC or 356ºF until the top is golden brown.
Slice into rectangles and devour. This slice is super yum when it’s still warm from the oven, but I imagine it’s also good cold – not that it’s ever lasted long enough at our place for me to find out.
