Mexican Wedding Cookies with Sabrina Sol
Who tried it: Sabrina Sol, author of Delicious Temptation
Why she likes it:
Although I’m not a pastry chef like my heroine in Delicious Temptation, I enjoy baking desserts. And the easier the recipe, the better. These cookies are sweet, buttery and a definite party pleaser.
1 cup REAL butter, room temp
¾ cup powdered sugar
1 teaspoon vanilla extract
2-1/2 cups sifted flour
½ cup finely chopped pecans
¼ teaspoon salt
Preheat oven to 350 degrees. Cream butter and gradually beat in 1/2 cup powdered sugar. Add vanilla, pecans and salt. Blend well until fluffy. Gradually add the flour until a soft blended dough forms. Separate dough in half and cover in plastic wrap. Chill for 30 minutes (you can also refrigerate for the next day – just bring to almost room temp before baking).
Remove the dough from the fridge and form into walnut-size balls (they don’t have to be perfect). Place on cooking sheet, spacing them about a ½ inch apart. Bake for 15-18 minutes until the bottoms are lightly golden brown. Pour remaining powdered sugar in a bowl. Roll the warm cookies in the sugar and place on a rack to cool. Add more powdered sugar as needed to coat the remaining cookies.
With all that extra time not spent in the kitchen, what’s Sabrina currently reading?
I just started Scoring the Player’s Baby by Naima Simone. I love Naima’s WAGS series anyway, but a hero inspired by Jason Momoa? I couldn’t one-click this one fast enough.

The only thing naughtier than a bad boy is a good girl…
Amara Maria Robles is a good girl. So good that she gave up her dreams of becoming a renowned pastry chef to help her parents with their struggling Mexican bakery. Yet her parents reject any changes she suggests, and refuse to sell her mouth-watering confections. Clearly being a good girl isn’t paying off. So when her brother’s sexy ex-best friend walks into the bakery, Amara’s tempted to be very bad indeed…
After a scandal twelve years ago, resident bad boy Eric Valencia has returned to make things right with his family and friends. One glance at Amara and her wicked curves, however, and Eric finds himself thinking about how she’d feel beneath him—something he promised Amara’s brother he would never think about, let alone do. But this bad boy is deep trouble…because Amara’s determined to have her cake, and Eric, too.
Sabrina Sol is the chica who loves love. She writes about sexy and smart Latinas in search of their Happily Ever After. She lives in sunny Southern California with her husband, 3 kids, 2 Beagles and 1 very lazy Bulldog.
