Mexican Wedding Cookies with Sabrina Sol

 

 

 

 

Who tried it: Sabrina Sol, author of Delicious Temptation

 

Why she likes it: 

Although I’m not a pastry chef like my heroine in Delicious Temptation, I enjoy baking desserts. And the easier the recipe, the better. These cookies are sweet, buttery and a definite party pleaser.

 

Ingredients:

1 cup REAL butter, room temp

¾ cup powdered sugar

1 teaspoon vanilla extract

2-1/2 cups sifted flour

½ cup finely chopped pecans

¼ teaspoon salt

 

Directions:

Preheat oven to 350 degrees. Cream butter and gradually beat in 1/2 cup powdered sugar. Add vanilla, pecans and salt. Blend well until fluffy. Gradually add the flour until a soft blended dough forms. Separate dough in half and cover in plastic wrap. Chill for 30 minutes (you can also refrigerate for the next day – just bring to almost room temp before baking).

 

Remove the dough from the fridge and form into walnut-size balls (they don’t have to be perfect). Place on cooking sheet, spacing them about a ½ inch apart. Bake for 15-18 minutes until the bottoms are lightly golden brown.  Pour remaining powdered sugar in a bowl. Roll the warm cookies in the sugar and place on a rack to cool. Add more powdered sugar as needed to coat the remaining cookies.
