Holiday Recipes: Daddy Jim’s Eggnog with Carol Pavliska

‘Tis the season for Daddy Jim’s Eggnog with Carol Pavliska!

7 tablespoons of sugar

5 eggs

1 pint Half and Half

1 ½ pints heavy whipping cream

2 shots of bourbon

Nutmeg

Instructions:

Separate the eggs, saving both the whites and the yolks. Add 2 tablespoons of sugar to the yolks and beat until light and fluffy. (My grandfather used to say that adding the sugar “cooked” the yolks.) Pour the yolk mixture into a small bowl and set aside. Next, beat the egg whites on high speed until creamy, adding 1 tablespoon of sugar while mixing. Add the yolks and mix together, and then add 1 pint of Half and Half. Mix well, adding 2 more tablespoons of sugar. Finally, add the heavy whipping cream. When lightly whipped, add the 2 remaining tablespoons of sugar, and continue whipping until you have a nice, creamy (not too thick) consistency. Add the bourbon (or leave it out) and sprinkle with nutmeg. Grab a fuzzy blanket, a good book, and settle in front of the fire – you’re all set!

There is nothing like Christmas in San Antonio, Texas. The season kicks off with the annual River Parade and lighting of the Christmas tree the day after Thanksgiving, and doesn’t end until the Epiphany on the sixth of January. Food is a huge part of the celebration, and my family enjoys the traditional Christmas Eve tamale dinner with all the fixings, including homemade guacamole, Mexican rice, and borracho beans. I don’t eat meat (neither does Julian, the guitar playing hero in COLOR ME CRAZY), so instead of pork, our tamales are filled with beans and peppers. I also don’t typically do dairy, but I do have one holiday exception: Daddy Jim’s Homemade Eggnog.

Daddy Jim was my grandfather, and he was an honest-to-God cowboy. He ws also a pretty good cook, whether he was cooking indoors or out on the trail with a Dutch oven and an open fire.

No Christmas is complete in our family without Daddy Jim’s eggnog. We make it every year and often take it to friends. The store-bought version can’t hold a candle to the real thing. If you’ve never tasted fresh homemade eggnog, you’re in for a real treat!
