Entangled For The Holidays with Tina Gabrielle

Hello from TINA GABRIELLE! I love cookies but I’m not a baker. I’m a cook. Early in the season, I was invited to a holiday cookie exchange for a group of mothers. I stressed about this until I found a recipe for chocolate crinkle cookies. With help from my youngest teenage daughter, we prepared the dough and refrigerated it overnight. The dough is very sticky, so you don’t want to skip this step. The next day, we formed the dough into cookie sized balls and then rolled them first in sugar, then confectioners’ sugar. The baked cookies came out fudgy and delicious. I was proud to offer them for the cookie exchange!

Ingredients:

½ cup unsweetened cocoa powder
1 cup white granulated sugar
¼ cup vegetable oil
2 large eggs
2 teaspoons pure vanilla extract
1 cup flour
1 teaspoon baking powder
½ teaspoon salt
¼ cup confectioners’ sugar

Directions:

In a mixing bowl, mix cocoa powder, granulated sugar, and vegetable oil. Beat in eggs one at a time. Add the vanilla and mix. In another bowl, combine the flour, baking powder, and salt. Add the dry ingredients into the wet mixture until a dough forms. Make sure you do not over beat the dough. Cover bowl with plastic wrap and refrigerate overnight.

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Add confectioners’ sugar to a small bowl. Add granulated sugar to a separate small bowl. Roll 1 tablespoon of dough into a ball. Coat each ball of dough in granulated sugar, then in confectioners’ sugar. Place on the cookie sheet.

Bake cookies for 10-12 minutes. Place on cooling racks. The cookies will come out of the oven soft, but they will harden as they cool.
