This week a special guest:
Chicken, Cashew Nut and Capsicum Stir Fry with Coleen Kwan
Who tried it: Coleen Kwan, author of His Millionaire Maid
Why she liked it: I am not the world’s most enthusiastic cook, so I’m always on the lookout for easy meals. I like Adam Liaw’s recipes because they’re uncomplicated, fresh, and delicious.
400g chicken breast fillet, cut into 3cm cubes
1 tbsp soy sauce
2 tsp cornflour
3 tbsp vegetable oil
1 small brown onion, peeled and cut into 3cm chunks
3 cloves garlic, roughly chopped
½ red capsicum, cut into 3cm squares
½ yellow capsicum, cut into 3cm squares
½ green capsicum, cut into 3cm squares
½ cup unsalted roasted cashew nuts
2 tbsp oyster sauce
1 tbsp soy sauce
1 tbsp Shaoxing wine
1 tsp white vinegar
1 tsp sugar
¼ cup chicken stock (or water)
- Combine the sauce ingredients and set aside. Combine the chicken with soy sauce and 1 tsp of the cornflour. Heat the wok over high heat and add 2 tbsp of the oil around its edge, letting it run down into the centre of the wok. Add chicken and cook, tossing the wok occasionally until the chicken is browned and just cooked through, about 3 minutes. Remove the chicken from the wok and set aside.
- Return the wok to a high heat and add the remaining 1 tbsp of oil. Add the onion and garlic, tossing until the garlic starts to brown. Add the capsicum and continue to toss in the wok until the pieces begin to soften. Add the sauce ingredients and bring to a simmer. Add the chicken and cashews and toss.
- Combine the remaining 1 tsp cornflour with 2 tbsp of cold water and drizzle mixture into the wok slowly , shaking or stirring the wok until the contents thicken to a silky consistency. Remove from the wok and serve.
Serve with steamed rice and bok choy with garlic sauce.
What is Coleen currently reading?
I enjoy picking up books from the little street libraries that have sprung up in my neighbourhood. Currently I’m reading The Cuckoo’s Calling by Robert Galbraith (aka JK Rowling). It’s a mystery novel set in London featuring private investigator Cormoran Strike.
Get His Millionaire Maid by Coleen Kwan for just 99¢!
They say be careful what you wish for, you just might get it. For Nina Beaumont, there’s nothing she wants more than to prove she’s more than just her name. She’s tired of being treated differently because of who her family is. As far as she’s concerned, money ruins everything. So when a rogue duck causes her to crash her car outside a small town, sending it and her belongings spiraling into the watery abyss, she realizes fate has given her a chance to show she can make it on her own.
Beginning with stumbling into a job with the hottest man she’s ever met…as his maid.
Between running an inn, caring for his grandmother, and trying to keep the dirty-dealing Beaumont Corporation from stealing his land, Joe Farina’s plate is full. He doesn’t have time for romantic entanglements–especially not with the suspiciously bad maid he just hired, no matter how attracted to her he is. But there’s something different about Nina and trying to resist their chemistry begins to feel futile.
