Rice Krispy Treats from Victoria Scott
Who tried it: Entangled Teen author Victoria Scott
Why she likes it: Listen. People think Rice Krispies Treats are for amateurs, but done well, nothing—and I do mean nothing—will move faster at a bake sale. I’ve tried over twenty different recipes in my attempt to find the perfect square of marshmallow-y goodness. And with a little help from Wilson, that delightfully wicked personality from Violet Grenade, who happens to love multicolored everything as much as I do, I finally landed on the gold standard for Rice Krispies Treats. Enjoy!
5 cups Rice Krispies
1 bag mini marshmallows
1 bag mini colorful marshmallows
1/2 stick butter
1/2 tsp. vanilla extract
- Melt butter in saucepan over low heat.
- Add vanilla once butter is melted.
- Add full bag of mini marshmallows and stir until melted.
- Add 1/2 bag of colorful marshmallows, stir in, and remove from heat. Don’t let the colored marshmallows melt entirely (This leaves little fluffs of un-melted marshmallows throughout – the winning touch!).
- Mix melted marshmallows goo with Rice Krispies in large mixing bowl.
- Once mixed, transfer to a buttered baking pan and flatten with buttered spoon.
- Wait 1 hour, then cut to serve.

I’m reading a regency romance called Edenbrooke by Julianne Donaldson. If you loved Downtown Abbey, you would love this book! It’s a departure from what I write (darkness and twisty things), but that’s exactly why I bought it!
